Field trip for students of group 21-P: from theory to practice

On February 28, 2025, students of group 21-P of specialty 076 Entrepreneurship and Trade had a unique opportunity to deepen their knowledge of meat processing technology by visiting one of the leading enterprises in the region, which slaughters pigs and processes carcasses and supplies meat to sausage shops. The trip was organized by the head of the economic department, teacher of commercial commodity science Iryna MARTYNOVA. Together with the students, the teacher of agricultural product storage and processing technology Lyudmila BALDYCH and the head of educational and production practice Taras SASOVSKYY visited the enterprise.

This field trip was an important stage in the training of future specialists, allowing them to see with their own eyes how theoretical knowledge is implemented in real production processes.

The tour began with an introduction to the sanitary and hygienic standards that are strictly observed at the enterprise. The students received special clothing and underwent a safety briefing.

Next, students of group 21-P visited the workshop where the slaughter and primary processing of animals takes place. Special attention was paid to technological processes, equipment and quality control at this stage. Students had the opportunity to observe the operation of modern lines that ensure high productivity and production safety.

The next stage of the excursion was a visit to the workshop, where the processing of half-carcasses into cuts, the process of deboning and sorting meat takes place. We got acquainted with the processes of cooling and freezing meat in refrigerators and freezers, its packaging and shipping to consumers. Of particular interest were the latest technologies that allow preserving the freshness and taste of products.

Students learned about the importance of quality control at every stage of production, from receiving raw materials to packaging finished products. They sell meat to workshops for the production of culinary semi-finished products and to enterprises engaged in the production of sausages and natural meat products in the Rivne region and neighboring regions.

The meat processing plant supplies its products under the trademark "Smach Meat". This is a family business of a family of college graduates who work directly at the enterprise and deal with the supply of raw materials from farms and agricultural enterprises throughout Ukraine and the logistics processes of shipping finished products.

During the tour, the students had the opportunity to talk with the chief accountant, veterinarian, technologist, and other employees of the enterprise, who shared their experience and answered numerous questions. This allowed the students to gain valuable practical knowledge and better understand the peculiarities of the work of a meat processing enterprise.

Teachers Iryna MARTYNOVA, Lyudmila BALDYCH and head of educational and industrial practice Taras SASOVSKY discussed with the company's specialists possible additions to the educational and professional program "Entrepreneurship and Trade" and the programs of the disciplines "Commercial Commodity Science", "Technology of Storage and Processing of Agricultural Products", "Logistics", employers' requirements for a modern specialist, and the issue of industrial practice.

The field trip to a meat processing plant was an unforgettable event for the students of the 21-P group. They gained valuable experience that will help them in their future professional activities. This lesson confirmed the importance of practical training and its integral role in the training of qualified specialists.
